Oven Roasted Shiitake Mushrooms. It's here! My favorite time of the year:) Fall... which means... MUSHROOMS! Yay!!! (applause) So many to choose from and so much you can do with these cute little treats! I thought I make this first fall recipe clean and simple to really bring out the natural umami flavors and aroma of the shiitakes:). Mmmm... just imagine your kitchen filled with the aroma of the shiitake mushrooms, garlic and olive oil... yummmm. I would recommend roasting the shiitake in a nice baking dish and serving it right out of the oven as an appetizer! It's also wonderful on a salad, or as a topping for a homemade pizza! Enjoy! Health benefits are also huge! Mushrooms in general are high in dietary fiber, minerals, vitamin B and D, highly known to be anti carcinogenic, and anti-inflammatory.
Recipe (serves 2-3)
I used a small baking dish to fit my small toaster oven. But if you would like to roast a large amount of mushrooms, I recommend using your oven and roast in a larger baking dish!
10 shiitake mushrooms, cleaned and stemmed
1 garlic, minced
1-2 tablespoon extra virgin olive oil
red chili pepper flakes, optional
1. Place mushrooms in a baking dish, caps facing up.
2. Drizzle olive oil.
3. Sprinkle salt and chili flakes.
4. Top with a drizzle of olive oil.
5. Transfer to a toaster oven and roast on 425F for 20-30 minutes. *If using a regular oven, preheat to 425 and roast for 15-20 minutes.
