Fried Shiitake Mushrooms | Sriracha Mayo. FRIED SHIITAKE MUSHROOMS
8 large fresh shiitake mushrooms
2 c. flour
2 egg, beaten
2 t. turmeric
1 t. dashi
kosher or sea salt for seasoning
canola or peanut oil for frying
Add the chopped shiitake mushrooms, flour, turmeric, dashi and two eggs in a large tupperware or a big sealed bag, close lid and shake to mix.
Fill in a shallow pot or pan halfway to the top with the canola or peanut oil. Heat until the temperature reaches 375 degrees.
Let the mushrooms fry for 4 minutes, turning, until they are golden brown. Remove to a paper towel lined plate and season immediately with coarse salt and the extra chopped onions.
1 garlic clove, finely grated
1 cup mayonnaise
3 tablespoons Sriracha
2 tablespoons fresh lemon juice
Mix and stir garlic, mayonnaise, Sriracha, and lemon juice in a small bowl to combine.
Can be stored for 2-3 days. Cover and chill.
